The highly successful long premiere run of Forks Over Knives at the Regal Fox Tower Theater came to an end on Thursday, Feb, 10, 2011. With 10 sell-out showings that first week, and then being extended through 5 weeks, this was far more successful that even the film-makers had hoped for.
The feature film Forks Over Knives examines the profound claim that most of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting our present menu of animal-based and processed foods.
A major storyline of the film explores the separate pioneering work of Dr. Caldwell Esselstyn Jr. and T. Colin Campbell, Ph.D. as through a combination of scientific experiments and clinical research the two of them document significant health improvements just by moving people away from the standard American diet that is high on animal products and processed foods. The film also follows some real life patients as they make these diet changes and see positive changes in their blood pressure, cholesterol levels, and other levels of health. One of the "patients" is the film writer and director Lee Fulkerson, a big man whose dinners pre-filming used to consist of a fast-food double cheeseburger, onion rings, and a chocolate shake. "By seeing the amazing results a whole foods, plant-based diet had on the health and well-being of our test patients, my mind was irrevocably changed," said Fulkerson in a recent VegNews article.

Dr. Campbell received his master's degree and Ph.D. from Cornell, and served as a Research Associate at MIT. He spent 10 years on the faculty of Virginia Tech's Department of Biochemistry and Nutrition before returning to the Division of Nutritional Sciences at Cornell in 1975 where he presently holds his Endowed Chair (now Emeritus).
In 1991, Dr. Esselstyn served as President of the American Association of Endocrine Surgeons. In April, 2005, Dr. Esselstyn became the first recipient of the Benjamin Spock Award for Compassion in Medicine. He received the Distinguished Alumnus Award from the Cleveland Clinic Alumni Association in 2009. His scientific publications number over 150. In 1995 he published his bench mark long-term nutritional research on arresting and reversing coronary artery disease in severely ill patients. That same study was updated at 12 years making it one of the longest longitudinal studies of its type. It is most compelling, as no compliant patients have sustained disease progression.
Sellout Crowds for Forks Over Knives Portland EventsThe preview screening of Forks Over Knives in Portland December 9 sold out just days after it was announced. The day before the screening, more than 270 people packed the hall with standing room only for a talk by Dr. T Colin Campbell, co-author of The China Study and one of the researchers featured in the Forks Over Knives documentary. These events were both sponsored by Northwest VEG at a way to help build interest in the upcoming nationwide premiere of Forks Over Knives in Portland January 7.
Dr. Campbell's talk gave us the story on how his many years of nutrition research completely changed his view on what is needed for a healthy diet, challenging conventional ideas in this field.
Dr. Campbell grew up on a farm in Virginia, milking cows and helping out with the other farm chores. He went on to earn a Ph.D. in animal nutrition from Cornell University, conducting thesis research on increasing production of protein in cattle. At the time, protein was believed to be one of the most important nutrients in food, and the more protein, the better. However, observations he later made while working on a nutrition improvement project in the Philippines, coupled with his research results in the lab, led him to question his prior assumptions of the value of animal protein. An article in an obscure Indian medical journal found that rats exposed to aflatoxin - a potent carcinogen, quickly developed cancer but only if the rats ate a high-protein diet. Rats exposed to the same levels of aflatoxins but fed a low-protein diet showed no cancer growth. Campbell's group repeated the study and found the same result. Further studies showed that it was the protein casein - the protein in milk - which fed cancer growth, but the protein found in soy and other plant products did not have the same effect. That work led to many years of nutrition research at Cornell University on nutrition and diet, and a complete rearrangement of his views on the effects of animal protein on human nutrition and disease.
