Volunteer Spotlight: Becky Kent

Becky Kent just finished assisting with her second round of the Veg 101 series. She helped organize the Compassionate Thanksgiving and has tabled on numerous occasions. Becky is quite wonderful and versatile. We are so grateful for all that you do, Becky! We will greatly miss you, but wish you all the best at Bastyr University next year!

How long have you been veg and why?
I have been vegetarian for eight years and vegan for one year. It first started as an aversion to meat served at my college cafeteria. But I realized that making this decision for myself would have positive impacts on my health and the environment. Then I read Gene Baur's book Farm Sanctuary last year and knew I could never eat animal products again. I wanted to lead a more compassionate life, so I became vegan.

What's on your dinner plate?
Lately I've been on a soup kick. I love split pea soup, lentil soup, black bean soup, minestrone soup, and "cheesy" soup. I love sandwiches made from avocado, tomato, kale, and tempeh baked with Annie's Woodstock Dressing. I love tofu scrambles with roasted or mashed potatoes! Oh, and of course, tons of quinoa, brown rice, veggies, and beans.

How has being veg impacted your life?
This choice has changed my life in so many ways. It has opened my eyes to what really happens with our food and makes me feel empowered. Being veg has also motivated me to pursue my passion for food and health I'll be entering Bastyr University (near Seattle) in the fall to become a Registered Dietitian.

What has been your most memorable NW VEG volunteer experience?
My most memorable experience as a volunteer was the Compassionate Thanksgiving Potluck last year. I had a lot of fun helping plan and pull the event together. It was amazing to see so many people come to enjoy a delicious vegan meal and great company. I couldn't believe how many people said it was their first time at a NW VEG event... and that it wouldn't be their last!

What is something about you people should know?
I came to Oregon to get a fresh start on life and it definitely worked. I found direction, purpose, happiness, and most importantly love! This summer I'm excited to be wedding the most incredible person I've met, Kaitlyn.
