| Heart Healthy and Gluten-free Walnut Flax Cookies |

- 2-1/2 c. walnut pieces
- 2/3 c. oat flour
- 1/2 tsp. salt
- 1/3 c. flaxseed meal
- 1/2 c. maple syrup + up to 2 T. more
- 2 tsp vanilla
Directions for 18 cookies:
- Preheat oven to 350 degrees; use parchment paper or grease cookie sheets
- Grind walnuts
- Add all the ingredients in the order given to a small bowl; mix well
- Drop dough on cookie sheet with a spoon and flatten with a fork
- Bake 10-15 minutes or until golden brown, checking often to prevent burning
- Let cool before removing from the cookie sheet
Notes: Add up to 2 T. more syrup if needed to hold the cookies together. You can grind
oatmeal in a good blender to make oat flour, or also make these with whole wheat pastry if
GF isn't an issue!
