I have the privilege of presenting at Veg 101 this year, along with other great speakers such as Dr. Craig McDougall and 7 excellent chefs. My talk is on how through dietary choices we can strongly reduce the huge negative impact that the foods we produce have on the environment - particularly animal-based foods.
I’ve worked for 33 years as an environmental scientist for the Oregon Department of Environmental Quality - specializing in recycling and waste reduction. Recycling is important work, but what I’ve found from looking at the data is that the the environmental benefit that comes from a plant-based diet is far greater than the environmental benefits we can achieve from recycling. I’ll be sharing this information with the Veg 101 class at my talk.
Veg 101 starts March 3rd, and will be held on 6 consecutive Sunday evenings from 6:30 to 8:45 at the Tabernacle Seventh-day Adventist Church - 26 SW Condor Way, Portland, OR 97239. Click here form more information and to register.
