I have the privilege of presenting at Veg 101 this year, along with other great speakers such as Dr. Craig McDougall and 7 excellent chefs. My talk is on how through dietary choices we can strongly reduce the huge negative impact that the foods we produce have on the environment - particularly animal-based foods.

I’ve worked for 33 years as an environmental scientist for the Oregon Department of Environmental Quality - specializing in recycling and waste reduction. Recycling is important work, but what I’ve found from looking at the data is that the the environmental benefit that comes from a plant-based diet is far greater than the environmental benefits we can achieve from recycling. I’ll be sharing this information with the Veg 101 class at my talk.
