Makes 4 waffles
2 cups GF oat flour (or whole wheat flour if not GF)
½ cup oats
¼ cup flaxseed meal
½ tsp cardamom
½ tsp cinnamon
Zest of ½ orange
1 tsp vanilla extract
1 ripe banana, smashed
1 Tbsp maple syrup
2 cups non-dairy milk
1) Combine flour, oats, flaxseed meal, cardamom, and cinnamon.
2) Add orange zest, vanilla extract, banana, and non-dairy milk. Whisk until combined. Batter may be lumpy. If too thick, add more milk.
3) Pour portioned batter onto preheated waffle iron and cook according to your waffle iron instructions. Serve with fresh fruit and maple syrup.
